Broccoli and Cheese Quiche
5 whole eggs
1 Cup broccoli
2 Cup cheddar cheese
1 Cup cottage cheese
1 tsp. of black pepper
Beat eggs, and cook broccoli until tender.Combine the rest of the ingredients in a large bowl and mix well.
Spray a 9" pie pan with vegetable spray. Pour in mixture. No crust needed! Bake at 375 degrees for 40-45 minutes. Let set for 15 minutes before cutting. 4 Servings.

Southwest Barbecued Chicken with Tomato Red Pepper Dressing
This is a healthy, spicy version of the classic. Cook the chicken in the oven, or on a grill.
4 tbsp Tomato Red Pepper Salad Dressing (recipe follows) 
1 tsp red chile powder 
1 tsp canola oil 
1/2 tsp honey (optional) 
2 boneless, skinless chicken breast halves (about 8 ounces) 
If using an oven, preheat to 375 degrees. Mix together the salad dressing, canola oil, red chile powder and honey if desired. Pour half of the dressing over chicken breasts in a nonstick baking dish. Bake for 10 minutes, then baste with remaining sauce and cook for another 10 to 15 minutes or until done. Do not overcook! 2 Servings.
Tomato Red Pepper Salad Dressing
1 (6 ounce) can of tomato paste 
1 whole roasted red pepper or pimento from a jar 
2 Tbsp red wine vinegar 
2 Tbsp water 
1 garlic clove, chopped 
1 tsp dried basil 
Combine all ingredients in blender and mix well.
